Maple Granola

Cooking Time: 1 hour, 15 minutes
Servings: 3-4

INgredients

  • ¼ cup SAPJACK Grade A Golden maple syrup
  • ¼ cup coconut oil melted
  • ½ teaspoon vanilla
  • 1 cup cashews
  • ¾ cup chopped almonds
  • ½ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • 1 cup dried cranberry
  • ¼ cup unsweetened shredded coconut

Directions

  • Melt maple syrup, coconut oil and vanilla in large bowl in microwave for 30 seconds
  • Chop cashews and almonds and place on a baking sheet and toast them in the oven at 350° F for 10 minutes
  • Remove from oven, add nuts to maple-coconut mixture
  • Stir well to coat, then stir in pumpkin and sunflower seeds, coconut and cranberries
  • Pour mixture onto large parchment-lined baking sheet
  • Bake at 350° F for 20 minutes
  • Remove from oven and use spatula to pat evenly flat
  • Leave to solidify for about 20-30 minutes
