Maple Granola
INgredients
- ¼ cup SAPJACK Grade A Golden maple syrup
- ¼ cup coconut oil melted
- ½ teaspoon vanilla
- 1 cup cashews
- ¾ cup chopped almonds
- ½ cup pumpkin seeds
- ¼ cup sunflower seeds
- 1 cup dried cranberry
- ¼ cup unsweetened shredded coconut
Directions
- Melt maple syrup, coconut oil and vanilla in large bowl in microwave for 30 seconds
- Chop cashews and almonds and place on a baking sheet and toast them in the oven at 350° F for 10 minutes
- Remove from oven, add nuts to maple-coconut mixture
- Stir well to coat, then stir in pumpkin and sunflower seeds, coconut and cranberries
- Pour mixture onto large parchment-lined baking sheet
- Bake at 350° F for 20 minutes
- Remove from oven and use spatula to pat evenly flat
- Leave to solidify for about 20-30 minutes
